Nana's 7 Layer Salad

This is Nana.

This is Nana's 7 Layer Salad.

This is how I feel when I eat Nana's 7 Layer Salad.

Any questions?

This salad is one of my mom's, aka Nana, favorite recipes. We enjoyed it often when I was growing up.  I remember mom entering this recipe in a 4-H cooking contest and winning first prize. It is perfect served in a trifle bowl since it allows you to see all the beautiful layers. If you want a lighter version you could simply use light dressing and/or light cheddar cheese.  The measurements are not exact which allows you to easily modify the amount needed for your family.

Buon Appetito!

Nana's 7 Layer Salad

Layer ingredients in the following order:
Iceberg lettuce or lettuce of your choice, torn into bite size pieces
Chopped tomatoes

Sliced purple onions
1 can Ranch Style Beans, drained
Cheddar Cheese, grated
Creamy Italian Salad Dressing (Seven Seas Green Goddess is what Nana uses.)

Sprinkle enough Fritos to cover the top just before serving.

Coconutty Orange Salad

Last week I baked some delicious $100,000 Cinnamon Rolls. The recipe calls for orange zest which left me with four zested oranges. I hate to waste food and try to either eat as leftovers, freeze, or use in another dish. I started thinking about what I could do with those oranges. In Sicily, they have an amazing orange salad that consists of blood oranges, green onion, and olive oil. I know it might not sound too appealing, but I can assure you it is wonderful. These simple ingredients go perfectly together. I didn't have any green onions but the thought of the Sicilian blood orange salad gave me inspiration to create a different type of orange salad.

Having just made the cinnamon rolls, I had some leftover pecans. I found some shredded coconut and golden raisins in the pantry and added them to the oranges. I drizzled some honey on top and sprinkled with cinnamon then stirred well. I was very pleased with the results and really enjoyed the light, tropical flavor the coconut added. My hubby really enjoyed it too, which is always a good sign. Topped with whipped cream or light cool whip this Coconutty Orange Salad would make a nice figure friendly dessert.

Coconutty Orange Salad
yield: 4 servings

4 medium oranges
1/4 cup golden raisins (or regular)
1/4 cup shredded coconut
2 shakes of cinnamon
1/2 tablespoon of honey

Mix ingredients together. It can be eaten immediately or allowed to chill then eaten.

Buon Appetito!

Copycat Olive Garden Salad

Typically when someone is called a copycat it is not meant to be a compliment, but I guess that depends on who or what you are accused of copying. If someone were to tell me that I was a Celin Dion copycat, I would definitely not consider that an insult, but since I can't sing very well I don't have to worry about that ever happening :)

I think it is best to be original. I don't like to copy others; instead I like to get "inspiration" from others. For instance, I am not a fashionista, but I can identify those who are and get inspiration on how to dress.

There are times however when something is so good you just need to flat out copy the original. This is definitely true with this salad recipe. I am sure that many of you have enjoyed the wonderful salad at Olive Garden Restaurants. Their unlimited soup, salad, and breadstick deal is awesome! I could just about eat my weight in the salad. I was so excited when I came across this recipe a few months ago at www.tammysrecipes.com. I filed it away in my recipe binder waiting for just the right occasion. About a month ago my neighbor had a girl's movie night/Wii dance party. It was loads of fun! I took this salad to the party and it was a hit! It really does tastes just like Olive Garden's salad. So in this case, being a copycat is a good thing.

Olive Garden Salad and Dressing

Yield: 8-12 servings
 Salad Ingredients:
1 bag American Blend Dole Mix
4-5 slices red onion
1 can Black Olives chopped or sliced (I prefer to use kalamata olives.)
2-4 Pepperoncini peppers
1/2 cup or more Croutons (for gluten free, don't add croutons)

1 Tomato, chopped
Freshly grated Parmesan cheese

Dressing Ingredients:
1/2 cup Mayonnaise
1/3 cup White Vinegar
1 Tbsp. Vegetable oil
2 Tbsp. Corn Syrup (I add a tad bit more since I like the dressing a little sweeter.)

2 Tbsp. Parmesan cheese
2 Tbsp Romano cheese
1/2 tsp Garlic salt or clove
1/2 tsp Italian Seasoning
1/2 tsp. Parsley Flakes
1 Tbsp. Lemon Juice
Instructions:
1. Combine salad ingredients and toss.
2. Whirl all dressing ingredients in the blender and pour over salad, coating well. Toss if desired. Sprinkle parmesan cheese over top and serve.

Buon Appetito!

Fried Okra Salad

Fried okra, or okry as I have heard it pronounced in the deep south, is a southern classic. It is one of my mom's favorite foods so we ate quite a lot of it growing up. There are other ways to prepare okra besides frying. It is delicious added to gumbo, stewed with tomatoes, or pickled.  But in my opinion, it is best fried! By now I am sure you know that I often alter recipes to make them healthier when possible. I have tried baking okra instead of deep frying, but it didn't turn out well. So I just enjoy this delicious veggie in moderation without any guilt.

I came across this recipe in a Paula Deen magazine and thought it sounded interesting. The sweet and sour dressing is so yummy with the okra. Even people who don't normally like fried okra really enjoy this salad.

Buon Appetito!

Fried Okra Salad
serves 6

1 ½ pound breaded frozen okra
Vegetable oil for frying
2 large tomatoes, seeded and chopped
½ green bell pepper, diced
1 bunch green onions, diced
6 slices bacon, cooked and crumbled
½ cup vegetable oil (I like to use olive oil)
¼ cup sugar
¼ cup distilled white vinegar

Fry okra in vegetable oil according to package directions: drain on paper towels.
In a medium bowl, combine okra, tomatoes, bell pepper, green onions, and bacon.
In a small saucepan, combine oil, sugar, and vinegar. Cook over medium heat, stirring frequently, until sugar dissolves. Pour over okra mixture, tossing gently to coat. Serve immediately.

Mrs. Patsy's Chicken Salad

This southern girl loves some chicken salad, but I don't love how traditional chicken salad recipes are loaded with fat. Mayonnaise is very fattening and when paired with a buttery croissant, a chicken salad sandwich can sabotage a healthy diet. Speaking of croissants, have you ever cooked or watched someone make them? If you have, I am sure you were as shocked as I was at the amount of butter used. Croissants look so light, fluffy, and totally innocent, but a 3 oz. croissant has 270 calories and 17 grams of fat! I assure you that the law of conservation of matter which states, "mass cannot be created or destroyed", applies to croissants. All that butter goes somewhere, and for me, it’s "through the lips, straight to the hips".

Never fear! You can still enjoy delicious chicken salad without the guilt. Here are a few tips on how to make traditional chicken salad healthier.
  • White meat contains less fast than dark meat, so try using white meat instead.
  • Use light mayo. It has 1/2 the fat of regular mayo.
  • Adding fresh fruit like grapes or pineapple to chicken salad adds bulk and flavor with no fat.
  • Dried fruit, like raisins or craisins, are good options as well, but are higher in calories than fresh fruit.
  • Add nuts for extra protein, fiber, and antioxidants. Nuts are high in fat so be careful about how much you add.
  • Eliminate the bread and serve on a bed of lettuce instead. You can cut approximately 250 calories by simply substituting lettuce for the bread.
  • If you really want bread, try pita bread (my favorite way to eat chicken salad) or a low fat flat bread, but beware of flat bread. It looks healthy but can pack as much as 9 grams of fat per piece!
This recipe is from my bff's mom, Mrs. Patsy. I got this recipe from her about 15 years ago, and it is still my favorite chicken salad recipe. It is perfect for summertime, and I like to serve it when I have friends over for lunch. Every time I make it, I have requests for the recipe. I hope you enjoy it as much as I do!

Buon Appetito!
